Habanero Bacon Pancakes
- 150g plain flour
- 1 large egg
- 1 heaped teaspoon baking powder
- 200ml milk
- 200g sweetcorn, drained
- 10 slices streaky bacon
- 3 tablespoons vegetable oil
- 3 tablespoons Habanero Gold
- pinch of sugar
- pinch of salt
Whisk together oil, milk, egg, sugar, salt and baking powder to form a smoothish batter, then fold in the sweetcorn.
Place oil into a medium heat frying pan. Ladle 2 tablespoons of batter into the pan and cook until the underside is brown. When the top starts to bubble, flip and cook until cooked through. Repeat until you have used up all of the batter.
Brush the bacon with Habanero Gold and grill the bacon to your liking.
To serve, place the pancake on a plate, put the bacon on top and drizzle over some Habanero Gold.
