Mango Chilli King Prawns
- 500g raw king prawns (shell on)
- 4 tablespoons Mango Chilli Sauce
- juice of a quarter of a lime
- 2 cloves garlic, crushed
- 1 tablespoon rapeseed oil
- 1 teaspoon sea salt
In a medium sized bowl, mix together the Mango Chilli Sauce, lime, garlic, oil and salt. Place the prawns in the bowl and coat all the prawns with the mixture. Cover the bowl with cling film and place in the fridge to marinate for 20 minutes.
Heat a griddle pan until slightly smoking then individually place the marinated prawns into the pan and cook for two minutes on both sides, or until the prawns have turned from grey to pink. You might need to cook in batches if your pan is not large enough.
Great as a side, snack or part of a larger meal.
