Marinated Chilli Tofu Skewers

INGREDIENTS

  • 450g extra firm tofu
  • 2 tablespoons Coffee Chilli Sauce
  • 2 tablespoons veg oil
  • 1 tablespoon soy sauce
  • 2 teaspoons demerara sugar
  • 1 tablespoon sugar
  • 1 garlic clove, crushed
  • 1 teaspoon salt
  • ½ inch-cubed ginger, grated
  • ½ lime, juiced

Place the Coffee Chilli Sauce, oil, soy sauce, ginger, garlic, sugar, salt and lime juice into a bowl and mix together.

Chop the tofu into 15 cubes, put these into the mixture and marinate for at least 8 hours, turning the cubes occasionally so that they’re fully coated.

Skew the cube onto the skewers with three pieces to each skewer. Cook on a smoking hot griddle pan or barbecue for a minute on each side, basting continually with the marinade as it cooks.

Serve with dressed salad.
