- 1 courgette, sliced
- 1 potato, cut into 1-inch cubes
- ½ red onion, peeled and quartered
- ½ red bell pepper
- 6 medium eggs
- 3 tablespoons Winter Chilli Sauce
- 1 ½ teaspoon salt, season to taste
Preheat oven to gas mark 8/230°C/450°F.
Place the courgette, potato, red onion and red pepper onto a baking tray. Pour the olive oil, 1 teaspoon of salt and 2 tablespoons of Winter Chilli Sauce over the vegetables and massage into the vegetables.
Put tray into the oven and roast for 40 minutes or until the vegetables are cooked.
In a bowl whisk together the eggs, cooked vegetables and add the remaining salt and Winter Chilli Sauce
Pour the egg mixture into an ovenproof frying pan/skillet then transfer to the oven. Reduce the oven temperature to gas mark 6/200°C/400°F and cook for 15 minutes or until the frittata is set.
