BBQ Jerk Chicken

INGREDIENTS
- 1kg 4 chicken legs
- 5 tablespoons Golden Bonnet
- 10g demerara sugar
- 3 large garlic cloves
- juice of half a lime
- 10g fresh thyme
- 1 tablespoon ground allspice
- 1 bay leaf
- 1 teaspoon ground ginger
- 1 tablespoon dark soy sauce
- 1 bunch of spring onions, roughly chopped
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- ½ ground black pepper
- ½ teaspoon nutmeg
- ½ teaspoon cinnamon
- ½ teaspoon ground cloves
Method
Place all the ingredients (apart from the chicken) into a blender and blitz until smooth. Rub the marinade onto the chicken and marinate for 8 hours or overnight in the fridge.
Once marinated, place the chicken on the barbecue and grill for forty-five minutes or until fully cooked, turning the chicken every so often. Regularly baste with some of the marinade.
