Welsh Rarebit
INGREDIENTS
- 4 slices of bread, toasted on one side
- 2 tablespoons butter
- 3 tablespoons plain flour
- 150ml full fat milk
- 3 tablespoons Fruity Chilli Sauce
- 120g mature cheddar, grated
- 1 egg, beaten
- 1 tablespoon Worcestershire sauce
- salt and pepper
Method
Place the butter and flour into a saucepan and cook on a medium heat stirring continually until the mixture starts to bubble and smell biscuity.
Next, slowly add the milk whilst stirring continuously. Once all of the milk has been added, add the Worcestershire sauce and mix thoroughly. Remove the mixture from the heat briefly. Stir in the Fruity Chilli Sauce, the cheese and add the salt and pepper, then return to a low heat. Stir the mixture to evenly mix and melt the cheddar.
Remove the saucepan from the heat and crack in the egg. Mix rapidly to avoid risk of the egg scrambling. Next, spread this mixture liberally on to the non-toasted side of the bread.
Place the rarebits onto a grill pan and grill on a high heat until they start to blacken. Serve immediately.
